This classic Italian red wine, made in the ripasso method, is a great match. Its soft spicy palate, at- tractive herbal notes and plum fruit flavours will elevate the speck, tomato, thyme and cheese components of the dish. The lively cherry notes, light tannins and fine acid structure pick up the tang of the tomatoes and also make for a great foil to the creamy richness of the sauce.
