PEROGIES There is nothing wrong with perogies pan-fried in butter. But perogies in mushroomsugo? Nowwe’re talkingmajor-league dumplings. Just about any flavour of perogi will work, and don’t skimp on the sour cream!
TOFU Seared slabs of firm tofu are smoth- ered in mushroom sugo for a memorable veg- etarian main. Nutty brown rice is the ideal starchy side, and an enoki garnish keeps the fungi theme.
PAPPARDELLE Glistening in a buttery, umami-packed sugo, wide ribbons of pasta wrap their tendrils around meaty mushrooms. Pass the Parm, but go easy or the cheese will bully the sauce.
