WITH MANGO & ROSEMARY American-style IPAs get their vibrant aromatics from hop varietals that give off tropical fruit and woodsy pine-tree-like aromas. To determine which flavour dominates the beer give it a swirl and a big sniff. Emphasize the herbaceous notes in Woodhouse IPA ( LCBO 538538, 473 mL, $3.00) by adding a sprig of rosemary to the ale. Or highlight the fruity hop aromas in Anderson IPA ( LCBO 494633, 6 pk, $14.50) by garnishing with a wedge of fresh mango (keep the peel on for structure and a pop of colour).
Not into funky cheese? Try a wedge of old cheddar—the tang stands up to the IPA’s bold bitterness.
Do IP AND CHEESE Pairing Double IPAs with holiday fare can be tricky because the full body and in- tense bitterness of the beer tends to take over. But the funky, piquant and savoury flavours of blue-cheese-stu ed olives can stand up to a robust IPA like Laser Show from Left Field Brewery ( LCBO 546457, 650 mL, $8.95). To serve, thread the olives on a cocktail pic and rest it on top of a snifter glass. Taste how the cheese teases out sweetness in the beer while also contrasting the ale’s juicy melon and lychee notes.
