In peak season right now, citrus fruits make all kinds of dishes zing with flavour—these recipes prove it!

CITRUS Cold, dark days bring peak citrus. Starting now and stretching into spring, we’re spoiled for choice. From sour to sweet to pleasingly bitter, there’s something for everyone. Little kumquats, with their edible skin and tart centres, have shown up on grocer’s shelves alongside mouth-watering (and easy to peel!) mandarins and minneolas. The almost forgotten white grape- fruit is sweeter than ever these days and is worth finding for its intoxicat- ing aroma. And because it’s the holidays, we take the most glamorous of the citrus siblings for a spin. Once an Australia-only export, stunning finger limes are now being grown commercially in California. They taste just like the limes you know, but their pulp looks and feels like celebratory caviar.
