Harissa, a spicy North African pepper paste, goes a long way in boosting the flavour of so many dishes. Look for tubes or jars of harissa at the supermarket, either with the spices or condi- ments. The tubes tend to have more of a raw, stronger flavour than the jars do. For a change of the soup’s taste, simply sub ei- ther Indian or Thai red curry paste for the harissa.
