EQUIPMENT The equipment needed to make curries is simple. Here are the basics:

For long, slow simmers with tougher cuts of meat, use a large, heavy Dutch oven .

CURRIES AROUND THE WORLD While curries vary within countries and regions, there are some signature ingredients common to each style. The easiest way to add a regional flavour is to use curry pastes, powders or masala blends tailored for the style you want that highlight these ingredients.

Indian There are too many styles to list but typical seasonings include turmeric, cumin, coriander, fennel, fenugreek, curry leaves, black pepper, chili pep- pers, onion, ginger and garlic.

Thai Thin sauces seasoned with onion, garlic, galangal, lemon grass, lime leaf, chili peppers, shrimp paste, fish sauce and coconut milk.

Chinese Mild blends of spices, sim- ilar to Indian curry powder, with onions, potatoes, soy sauce and hot pepper sauce or chili oil.

British Similar spices to the Indian style, with onion, garlic and ginger, often a tomato sauce, with chicken tikka masala being Britain’s most famous curry dish.

Caribbean Sweet spices such as allspice and cinnamon added to the Indian-style spices, with onion, garlic, ginger, thyme, citrus, hot chili peppers and coconut.

Designate one or two heatproof silicone spatulas or wooden spoons for curry (to keep your cake batter from picking up curry flavour next time you use your spatula!) A spice grinder if you’re using whole spices.
