Treat the vegetarians in your life with these mouth- watering mains that are as special as any other dish at the holiday table.
MUSHROOM WELLINGTON WITH QUINOA AND SPINACH
If there are any vegetarians at your holiday table, they deserve better than a plate full of side dishes. Mashed potatoes and green beans are a consolation prize, not dinner. Consider breaking with tradition and serve one of our magnificent meat- free main courses that will rival any roast. Two are vegan: Moroccan-inspired stuffed peppers with couscous, chickpeas and almonds, and a show-stopping veggie paella fragrant with saffron, paprika and sofrito. The vegetarian options include tofu steaks given the parmigiana treatment, and a regal MushroomWellington to be carved tableside.
