Cloud Margarita “Cadillac” is the name for a Margarita made with Grand Marnier instead of ordinary triple sec orange liqueur. Turn it into a Rolls-Royce with special-edition Grand Marnier packed with ultra-aged Cognac, fruit and spice flavours, plus a fine reposado in place of blanco tequila. The result is a luscious cocktail with a rose-gold colour. See p. 246 for a big-batch recipe. Wedge of lime Pink salt or sea salt–chili powder blend, for rimming glass 1 1/2 oz high-quality reposado tequila, such as Siempre 3/4 oz premium orange liqueur, such as Grand Marnier 3/4 oz freshly squeezed blood orange juice 3/4 oz freshly squeezed lime juice 1/4 oz orange syrup (optional) or agave syrup to taste Candied orange wheel (such as Sullivan Luxury) for garnish 1. Rub a lime wedge around rim of a chilled Margarita or coupe glass, and rim the edge in a saucer of pink Himalayan salt or a 1:1 mix of sea salt and chili powder. 2. Pour tequila, orange liqueur, blood orange juice and lime juice into ice-filled cocktail shaker. Shake for at least 30 seconds, then taste. Add orange or agave syrup, if desired, for sweetness to taste. Shake again.

3. Strain into rimmed glass. Garnish with candied orange.
