Tangerine & Poppy Seed Window Cookies Enjoying a tangerine is as much about its fragrance as its flavour. These pretty cookies use plenty of the most aromatic part of the tan gerine, its zest, and are filled with an easy homemade tangerine jelly. If you own silicone baking mats, roll out your dough directly on the mats so you don’t have to transfer the delicate cut-outs afterward. POPPY SEED SHORTBREAD 1 cup (250 mL) unsalted butter, softened 1/2 cup (125 mL) icing sugar 1 tbsp (15 mL) finely grated tangerine zest 2 tbsp (30 mL) poppy seeds 2 cups (500 mL) all-purpose flour 1/2 tsp (2 mL) salt TANGERINE JELLY 1/2 cup (125 mL) tangerine juice, strained 1 cup (250 mL) sugar 1 tsp (5 mL) lemon juice 1 tbsp + 1 tsp (20 mL) liquid pectin 1. Preheat oven to 325°F (163°C). Line two baking sheets with parchment. 2. For the shortbread, combine butter and icing sugar in a large bowl. Beat until fluffy. Beat in zest and poppy seeds. Add flour and salt and stir to combine. 3. Working on a lightly floured surface, using half the dough at a time, roll out dough to a scant 1/4 inch (5 mm) thick. Cut using a 2-inch (5-cm) cutter in preferred shape. Using a smaller cutter in the same (or complementary) shape, cut out a window in half of them. Gather and re-roll scraps as necessary. Carefully transfer to prepared sheet leaving 1/4 inch (5 mm) between cookies. Repeat process with remaining dough. Place baking sheets in fridge for 30 minutes, or freezer for 15. Extra poppy seeds to decorate (optional)

WHAT TO SERVE Canadian Club 100% Rye Whisky LCBO 390583, $31.95

4. Bake 13 to 15 minutes, rotating pans halfway through, until light golden around edges. Let cool 10 minutes, then transfer to racks to cool completely. 5. To make the jelly, combine juice, sugar, lemon juice and pec tin in a small pot. Stir to dissolve sugar and bring to a boil over high heat. Tip out into a bowl. Let stand until beginning to set,

about 30 minutes. Stir to break up. Spread 1 tsp (5 mL) on bottom cookie and place windowed cookie on top. Fill hole with a little extra jelly. Repeat with remaining cookies. 6. If you plan on gifting them, use the extra poppy seeds to deco rate the top of the jelly so they don’t stick together in the box. Makes 24 to 30 cookies
