Drink of the Season SEASONAL SIPS

A Bombo (aka Bumbo or Bumboo) was originally a pirate riff on grog, the sailor’s ration of watered-down rum. The swashbucklers made it more interesting with the additions of sugar and spice. Our modern Bombo (p. 245) treats it more like an Old Fashioned, sweetening premium aged rum with demerara syrup and serving it over a big ice cube. Freshly grated nutmeg provides a bit of theatre and a heady aroma.
