One of the hottest trends around is the NoLo movement. It ensures everyone has something to sip that works for them, including de-alcoholized beer and wine and lower-alcohol mixed drinks. It’s an exciting new world worth exploring.

By the Numbers: The Evolution of De-alcoholization

California's BevZero worked on tweak ing Jung’s system to protect the essence and structure of a beer, wine or spirit while removing the alcohol. It has now released a proprietary “GoLo” system: easy-to-use commercial equipment designed to retain maximum flavour.

Dr. Welch’s Unfermented Pure-Grape Juice Wine hit the market, making temperance advocate Thomas Welch a pioneer in the non-alc space. The key to his success was playing around with pasteurization until he figured out a way to prevent fermentation.

After nearly a decade’s work, German winemaker Carl Jung got a patent for the first de alcoholization. His vacuum distillation method gently removed alcohol from wine through a novel combination of heat and pressure.
