Innovating with Icewine Go beyond solo sipping with these alternative ways to indulge in icewine.

SHAKE IT UP

Courtesy of Jeremy Harb, Food & Beverage Manager at Prince of Wales Hotel, Niagara-on-the-Lake, this cocktail’s blend of sweet icewine and spicy Tabasco pays homage to the Niagara region, mirroring the chill of its frosty winters and warm welcome of its hospitality. 1 oz vodka 1/2 oz Sortilège Maple Whisky (LCBO 250134, $35.60) 1/2 oz crème de cacao 3 drops Tabasco 1/2 oz Vidal icewine Frozen grape and dry chili pepper to garnish (optional) 1. Add all ingredients up to icewine to a cocktail shaker with ice. Shake then strain into a martini glass. Top with icewine. Garnish with a fro zen grape and chili pepper on a pick.

Quick Tips Use a standard white wine glass to give yourself ample space to swirl the wine before taking your first sip. Chill your glasses in the fridge for 10 minutes before pouring the wine to ensure a perfect temperature. Before opening, store icewine on its side or on a slant to keep the cork wet. Chill icewine in the fridge for about 2 hours before serving. After opening, icewine will keep for several weeks in the fridge, if sealed. Recommended serving size: 1.5 to 2 oz per person.

Frozen Food Why stop at sipping? This versatile wine can be a secret weapon in the kitchen, adding a frosty finish and a burst of rich flavour to both sweet and savoury creations.

ICEWINE SALAD DRESSING Swap icewine in for your usual sweet ingredient, such as honey or maple syrup, in your next salad dressing to add a bright flavour that’s a lovely match for bitter greens like arugula.

ICEWINE MARINADE Marinate proteins like salmon or chicken breast in about 1/2 cup (125 mL) icewine per 12 oz before grilling, baking or pan-frying to add a delicately sweet note. You can also reduce a cup of icewine over low heat to make a delicious finishing glaze.

ICEWINE FROSTING Give your frost ing a flavour boost by adding a few tablespoons of icewine before whipping. Use it to garnish cakes and other baked goods.
