Shiitake, Squash & Tofu Soup This simple vegan soup is hearty enough for a cold winter night, but light enough to provide an antidote to bouts of holiday indulgence. Feel free to substitute any fresh sprouts you have on hand or really anything green and salady.

SHOPPING LIST 0 1 block (425 g) firm or extra firm tofu, cut into 1-inch (2.5-cm) cubes 0 1 tsp (5 mL) salt 0 1 small kabocha squash, about 2 lbs (905 g) 0 1/2 lb (225 g) fresh shiitake mushrooms, stemmed, quartered 0 32/3 cups (900 mL) mushroom stock, preferably Campbell’s 0 3 cups (750 mL) water 0 2 tbsp (30 mL) light miso 0 1 tbsp (15 mL) finely shredded ginger 0 Lemon wedges and pea sprouts for serving 1. Place tofu and salt in a large pot and add enough water just to cover. Place over medium heat. When it comes to a simmer, cook for 2 min utes then drain gently and set aside. Discard cooking liquid. 2. Cut squash into quarters. Remove and discard seeds. Cut each quar ter in half crosswise, leaving skin on. Place squash, skin side down, in same pot and add enough water to come halfway up squash. Bring to a boil over high heat. Cover and reduce heat to maintain a simmer. Cook until fork-tender, about 15 minutes. Care fully transfer squash to a plate and discard water. 3. In same pan, bring mushrooms, stock, 3 cups (750 mL) water and tofu to a simmer over medium. Simmer until mushrooms are tender, about 7 minutes. 4. In a small bowl, whisk miso with a little of the hot broth until smooth, then mix into soup along with ginger. 5. Place a bowl and three 4-cup (1-L) storage containers on counter. For each portion, place two pieces of squash, top with some sprouts, one quarter of the soup and a squeeze of lemon. Portions can be covered and refrigerated up to 5 days or frozen up to 1 month.
