DINNER FOR ONE
Spicy Shrimp & Udon Soup Gochujang adds fire and umami to this satisfying soup of sweet shrimp and fat noodles, while kimchi gives it depth and tang. Available at Loblaws and Asian supermarkets, frozen udon are decidedly preferable to shelf-stable, though the latter can be used successfully—simply cook according to package directions.

SHOPPING LIST 0 32/3 cups (900 mL) miso broth, preferably PC brand 0 32/3 cups (900 mL) water 0 1/4 cup (60 mL) gochujang 0 4 tsp (20 mL) sugar 0 1 tbsp (15 mL) fish sauce 0 1 lb (455 g) 21-30 count raw shrimp, peeled, deveined 0 11/2 cups (375 mL) cabbage kimchi, divided 0 1 container (142 g) baby spinach 0 4 portions frozen udon noodles 0 2 green onions, thinly sliced 1. In a large pot, bring broth, water, gochujang, sugar and fish sauce to a boil over high heat, stirring to dissolve gochujang. Reduce heat to maintain a simmer and add shrimp. Cook until cooked through, 11/2 to 2 minutes. Transfer with a slotted spoon to a plate. 2. Thinly slice 1/2 cup (125 mL) kimchi and add to the broth. Simmer on medium heat, partially covered, for 5 minutes. Add spinach and 1 portion of udon noodles. Cook until noodles are tender and spinach is wilted, about 2 minutes. 3. Remove from heat. Transfer noodles to a bowl and top with one quarter of soup and of shrimp. Garnish with one quarter of green onions and one quar ter of remaining kimchi. Serve soup. 4. When cool, divide remaining soup and shrimp between three 3-cup (750 mL) containers. Divide remaining kimchi and green onions overtop. Por tions can be covered and refrigerated up to 5 days or frozen up to 1 month. 5. To reheat a portion, bring to a sim mer in a saucepan over medium heat. Add 1 portion of frozen udon and cook until tender, about 2 minutes.

Charm Soju Liquor LCBO 40626, 360 mL, $10.90 At 20 per cent alcohol by volume (ABV), Korean soju can stand up to this soup with robust and tangy flavours. Serve chilled with a lemon garnish.
