spicy fruit salad
8 cups (2 L) bite-sized pieces of fresh fruit 1 jalapeño pepper 1 Stir juice with sugar and sambal oelek. Use the smaller amount of sugar if the fruit is quite sweet. 2 Prepare most fruit an hour or 2 ahead, but add items such as apple and pear, which tend to brown, and soft banana and kiwi just before tossing with sauce. 3 Stem and seed jalapeño. Very thinly slice or cut into fine dice. 4 Toss fruit with citrus sauce when ready to serve. Garnish each serving with a sprinkling of jalapeño pepper. Makes 8 cups (2 L), about 6 servings
Indonesia has many salads composed of mix- tures of fruit with awide variety of spicy sauces, including some that use fish sauce! (Which I tried, and found no fishy taste, though the im- parted saltiness was off-putting.) Instead, this fresh fruit salad has a sweet citrus taste with very pleasant spiciness, which builds up after a few bites. Buy fruit from what looks best at the market, thinking of both colour and taste; mango, seedless grapes, strawberries, papaya, melon, pear, apple, clementine and grapefruit are all ideal. Hefeweizen is an unfiltered style of wheat beer. An aroma of cloves is a natural outcome of fermentation, along with fruity and banana flavours. Low bit- terness and forward fruity character will temper the heat of sambal oelek, mak- ing this beer a natural accompaniment for spicy fruit salad.
