SYRUP PEARLS If you’re looking to garnish your cocktails with something more interesting than a twist or a cherry, these syrup pearls from France have got you covered. Originally devised by molecular gastronomy chefs, the gelatinized orbs of flavoured syrup are not too sweet and pop pleasantly in the mouth like caviar. They’re available in a variety of colours and flavours, and since they sink, they look best in stirred and clear drinks. You could also spoon some into flutes before pouring sparkling wine for a snow globe effect. Either way, they’ll be the talk of your next cocktail party.
