Mexico’s beloved cocktail is reimagined as a sumptuous dessert square with lime, tequila and flaky salt.

SALTED MARGARITA BARS This cocktail-turned-dessert is ready for sunny days ahead with the bright, refreshing flavours of the iconic Margarita. A generous splash of blanco tequila lends its patented vegetal profile to an ultrasmooth curd, while fresh lime zest amps up the citrus quotient in the buttery crust. For a final flourish, flaky sea salt, like a Margarita rim, intensi- fies all the flavours with its delicate crunch. Recipe on page 106

Only use freshly juiced citrus for the best possible flavour.

WHAT WE USED The pure, clean flavour of agave shines through in blanco tequila; its notes of citrus and black pepper are key to the complexity of these delicious bars. We used 1800 Silver Tequila ( LCBO 227678, $39.95), a double-distilled spirit made from 100 per cent Weber blue agave.
