LCBO Food & Drink Spring 2022

Gimlet Espresso Martini Recipe on page 111 Juhyun James Park has created this love child of a classic Gimlet (gin and lime cordial) and the trendy Espresso Martini. In the style of the Toronto establishment where he works, Mother Cocktail Bar, he’s used an inventive mixology technique to create a “clarified” citrusy cordial, infused with coffee flavour. A professional bartender in Taiwan, Korea and Canada for several years, Park was a 2021 finalist in the prestigious Diageo World Class

Canada competition. IG @jamespark0518

Wine aged in spirit barrels Big, bold reds lend themselves to ageing in spent barrels that were once home to potent spirits. The results are food-friendly wines that can stand up to robust and spiced flavours. Steak, anyone?

Yellow Tail Cabernet Sauvignon Whiskey Barrel AGED LCBO 21379, $14.95 Australia is known for this vari- etal, so it makes sense that one of their most recognizable wineries is taking this wine into new terri- tory by ageing in whisky barrels.

Beringer Brothers Bourbon Barrel Red Blend LCBO 572800, $19.95 Coming from Germany, Frederick and Jacob Beringer founded a winery-distillery where they aged wines in spirit barrels in the early days. Aged in American oak bour- bon barrels, this offering is a nod to that history.

Robert Mondavi Private Selection Rum Barrels Merlot LCBO 13734, $19.95 Layered with more than the tra- ditional flavours associated with this varietal, this Merlot catches toasty coconut and vanilla notes from its rum-barrel ageing.

Rum aged in fortified-wine barrels El Dorado 12 Year Special Finish Madeira Dry Cask LCBO 24442, $118.95 An expansion of its award-winning 12-year staple, this incarnation from El Dorado’s limited-edition cask series adds a year of maturation in casks that were previously used for Madeira wine. Savour its additional toasty, nutty notes and long-lasting citrus peel finish.
