Bubble tea shops, featuring exotically flavoured drinks with a layer of syrup sweetened boba (tapioca pearls) at the bottom, have proven to be such a lasting non-alcoholic drink craze that bartenders are incorporating boba into cocktails. We love this drink for its “sunrise” red layer, inspired by the retro-cocktails trend that’s brought everything from fancy Long Island Iced Teas to Tequila Sunrises back into fashion. The technique of layering spirits or liqueurs comes from the pousse-café trend from 19th-century France, a whimsical form of mixology that we still love for modern-day drinks.
