LESSONS IN TEQUILA
A Million Margs The ever-popular combination of blanco tequila, orange liqueur and fresh lime juice can be reimagined so many ways:
BLEND UP A FROZEN LIMONCELLO MARGARITA (P. 109) Since sugar levels of limoncello (we used Rossi d’Asiago Limoncello, LCBO 469643, $26.70 ) can vary, adjust the amount of lime juice as needed to suit your palate!
Signature Serves
Float a bar spoonful of Campari or Aperol on top of a frozen Margarita.
Verdita: Blended fruit juice, herbs, citrus and chili, served on the side, refreshes between sips. Try a pineapple-based verdita from Tequila Tromba (recipe at LCBO.com/fdspring24).
Rim glasses with dramatic black salt or with a Swicey Glass Rimmer (see link below).
Ginger, basil or mint add botanical notes to any Marg, while shaking with raw jalapeño slices brings the heat.
Seasoned citrus: Nibble orange wedges dipped in savoury sal de gusano (or “worm salt,” made of moth larva, see previous page) or sal de chapulin (with dried grasshoppers) between sips: find at thespicemerchant.ca or cocktailemporium.com.
Blend, muddle or shake in some fruit flavour, like watermelon, strawberry, mango or cucumber (yes, it’s a fruit)!
Substitute orange liqueur with Grand Marnier to make a Cadillac Margarita, agave syrup for a Tommy’s or blue Curaçao for orange flavour with a turquoise hue.
Reinvent classics: Barrel- aged tequila substitutes beautifully for whisky in an Old Fashioned or Manhattan, and blanco or reposado tequila spices up Caesars and Mules (in place of vodka) or Negronis (in place of gin).
