Aperol Sour

Sweet, sour and gently bitter, this gor geous cocktail has a light, pillowy texture thanks to an egg white. Between the vibrant hue and gorgeous cap of foam, it will be the star of your Instagram feed.

1 oz Aperol ( LCBO 176834, $32.95 ) 1 oz gin 3/4 oz Simple Syrup (recipe p. 105)

3/4 oz fresh lemon juice 1/4 oz fresh orange juice 1 egg white Lemon or orange twist to garnish (optional) 1. Place Aperol, gin, simple syrup, lemon juice, orange juice and egg white in a cocktail shaker. Shake vigorously until frothy, about 30 seconds. Fill shaker three quarters full with ice. Shake until ice-cold, about 15 seconds. Fine-strain into a chilled coupe. Garnish with citrus twist, if using.
