A TASTE OF TIRAMISU

Tiramisu “Espresso” Martini Made some of our delicious tiramisu desserts? Use up left over ingredients by shaking them up into this delicious twist on an Espresso Martini made with all things tiramisu-flavoured—mas carpone, rum (instead of vodka) that’s infused with ladyfinger cook ies and coffee, of course. 2 oz Cookie-Infused Rum (recipe follows) 1 oz strongly brewed espresso coffee 2 tsp (10 mL) condensed milk 2 tsp (10 mL) mascarpone cheese Cocoa powder 1. Pour rum, coffee and con densed milk into cocktail shaker filled with ice. Add mascarpone. Shake until chilled. Strain into a chilled coupe or cocktail glass. Sift cocoa overtop.

Makes 1 cocktail

COOKIE-INFUSED RUM

Tear 3 ladyfinger cookies into large chunks and add to a Mason jar. Pour 1 cup + 1 tbsp (250 mL + 15 mL) amber or spiced rum overtop and stir. Cover and let infuse for 6 hours. Fine-strain through cheese cloth to remove all solids.

Makes 1 cup (250 mL)
