2. Place rack 6 inches (15 cm) from broiler. Line a large, heavy-duty baking sheet with foil. Place buns on sheet. Turn broiler on high. 3. Heat oil in a large, nonstick frying pan over medium-high. Add hot dogs. Cook, turning occasionally, until lightly browned and crispy, about 3 minutes. 4. While hot dogs are cooking, place chili in a microwave-proof bowl. Cover with plastic wrap poked with a few holes to let steam escape. Microwave on high until hot, 30 to 45 seconds. Divide evenly between buns.

5. When hotdogs are ready, transfer to buns. Top each hot dog with 11/2 slices cheese.

6. Broil, watching carefully, until cheese is melted, about 11/2 minutes. Sprinkle with chopped onion and jalapeños. Serve immediately.

GINGER SPRITZER Made with any off-dry rosé, this simple-to-make, pale pink spritzer plays spicy and sweet flavours off each other for a refreshing, lower-alcohol fizzy cooler. We used Bitter Truth Chocolate Bitters, which are available at cocktail supply shops (such as cocktailemporium.com and barkeepstore.ca).

3 oz chilled off-dry rosé wine 3 oz chilled ginger beer 1 tsp (5 mL) fresh lemon juice 2 dashes chocolate bitters 1 sprig fresh mint

1. Add ice to a wineglass and build drink by pouring in wine, ginger beer and lemon juice. Stir gently and add chocolate bitters on top for aro matics. Garnish with a sprig of fresh mint.
