Lasagna Nachos BY JESSE VALLINS
These nachos turn a familiar and comforting dish into a creative crowd-pleaser. Crispy pasta “chips” meet all the classic lasagna ingredients, creating a playful mash-up perfect for sharing, snacking or turning pasta night on its head. 1 box (1 lb/455 g) dried lasagna noodles (not oven-ready) 1/4 cup (60 mL) extra virgin olive oil 1 cup (250 mL) finely grated Parmesan cheese, divided Salt and Italian seasoning to taste 4 cups (1 L) grated mozzarella cheese 2 cups (500 mL) marinara sauce, such as Rao’s or Carbone 11/2 cups (375 mL) ricotta cheese 1 bunch fresh basil, leaves removed, larger leaves torn Freshly ground pepper to taste 1. Preheat oven to 425°F (218°C). Line two baking sheets with parchment and place wire racks on top. 2. Bring a large pot of salted water to a boil. Add lasagna noodles and reduce heat to medium-high. Cook, stirring occasionally, until al dente, about 9 minutes. Drain well and lay noodles in a single layer on racks on baking sheets. 3. When cool enough to handle, cut into tortilla-style triangles using scissors. Transfer to a very large mixing bowl and toss with olive oil and 1/2 cup (125 mL) Parmesan.
and garnish with basil and plenty of ground black pepper. Serve immediately.
4. Arrange pasta pieces in a single layer on prepared baking sheets. Bake for 10 minutes, flip, then bake until golden and crisp, about 8 minutes more. Remove from oven and season with salt and Italian seasoning. Transfer lasagna chips to a clean platter or tray to cool while you bake rest of noodles. (This step can be done up to 2 hours ahead of time.)
6. Remove wire rack from one baking sheet and line with fresh parchment. Spread lasagna chips over and sprinkle evenly with mozzarella. Dollop with marinara and ricotta, then sprinkle over the remaining 1/2 cup (125 mL) Parmesan. 7. Bake until heated through and cheese has melted, about 10 minutes. For a deeper colour, broil on high for 1 to 2 minutes, watching carefully to avoid burning. Remove from oven
