Peppers, tomatoes and mushrooms are brilliant accompaniments for these light summer reds and there are several great recipes from our archives to choose from at foodanddrink.ca/chilledreds. Try the Carpaccio of Vegetables from Summer 2009 or the delectably tangy Grilled Polenta and Peppers with Grape Tomatoes (Summer 2007), with Lucy Waverman’s Ratatouille Tart (Early Summer 2006) served cold, alongside. For a warm dish, I recommend Vegetarian Stuffed Portobellos with Tomato-Shallot Vinaigrette (Summer 2009). Serve them all together, family style, for a relaxed vegetarian feast.
