HOW TO USE IT

This recipe makes enough marinade for four 6-oz (175-g) pieces of fish. While the mar- inade works on virtually any fish, it’s best on lean flaky mild fish like cod, halibut, sea bass and haddock. To cook, use the indirect method by lighting just one side of the grill, closing the lid, and pre- heating on medium-high to 375 ° F (190 ° C). Oil the unlit side of the grill. Cook over indirect heat, skin-side down if applicable, with lid closed, for 8 minutes per inch (2.5cm) of thickness.
