CAST IRON GRILLING

IT MIGHT SEEM a little strange to place a cast iron pan over your grill, but there are more reasons to do it than not. Flat-top grilling, known as a la plancha in Spain and Argentina where it’s common, offers increased contact with the cooking surface versus a grill. The result is a pleasing crust (as demonstrated by our steak recipe) and more complete browning of the food’s surface. And be- cause there are no grates to balance the food between, it’s ideal for grilling smaller pieces of food. The closed surface eliminates drip and flare-up that can cause unpleasant sooty flavours too.
