Peel and thinly slice 1 cup (250 mL) ginger. Boil with 1 cup (250 mL) sugar and 2 cups (500 mL) water in a saucepan; simmer for 1 hour, until thickened. Strain and cool. In a 750-mL glass bottle, mix 1 3 ⁄ 4 cups (425 mL) rye and 1 1 ⁄ 4 cups (310mL) ginger syrup. To serve; gently shake, pour 2 oz over ice, top with club soda and stir. Makes 12 drinks. BAR CHEF  Dip the strained ginger slices in granulated sugar, then dry on a rack overnight to make candied ginger. Store in an airtight container in the refrigera- tor for up to two weeks. Between the Lines Winery in Niagara brings Vidal grapes and delicate effervesence to this canned VQA sparkling wine. It’s aromatic with citrus and stone fruit, nicely sweet but crisp when served chilled. The slim gold-and-white can makes a perfect single serving or a lively mixer to use in spritzers or sparkling cocktails.

MONTY’S AGED RYED ALE

LCBO 498691, 473 mL, $3.25 A new classic from Toronto’s Old Tomorrow brewery, Monty’s Aged Ryed Ale gets its spicy and smooth finish from rye whisky barrels. It’s named after a classic Canadian moment in sports: skeleton racer (and Amazing Race Canada host) Jon Montgomery’s post-gold-medal beer-chug at the 2010 Vancouver Olympics.
