HOW LUCKY WE ARE to live in a country as cool as Canada! If you criss-cross this nation you can enjoy enough culinary experiences to fill three lifetimes. From Dungeness crab fresh off the boat in Tofino, B.C., to sugaring off during Sugar Festival at what may well be North America’s only urban sugar bush, in Ottawa’s Richelieu Park, to roasting s’mores over a campfire along the northern shores of Hudson Bay while watch- ing polar bears lumber by. You can dine high (check out our Bucket List meals) and low (see our Must-Stops during your road trip) while delighting in the best local ingredients and the most wonderful places to stay. Canada’s chefs, cooks, bakers, winemakers, farmers, fishers, cheesemakers and chocolatiers are raring to go with confidence and creativity like never before (Hidden Gems alert!). Here is my best culinary advice for you: travel in Canada. Ditch your tickets to Europe or the United States and instead drive, take the train, a ferry, rent an RV, walk, run or fly. Check out Galiano Island off the B.C. coast, visit Chester, N.S., stop in at Dildo, Nfld., say hello to Halifax. There are seriously delicious things to eat from sea to shining sea. Here is our list of some of the best Canuck experiences in the land. Find out where to find them on page 172. But for now, let’s eat!
