Duchesse de Bourgogne Here’s another Flanders Red Ale ( LCBO 492769, 330 mL, $3.00) blending younger and barrel-aged beers. A touch sweeter and denser than the Rodenbach, it shows a core of rich roasted malts and sweet-and-sour cherry flavours with a subtle edge of hoppy bitterness. The cherry-lime sweet-sour chutney on our chicken burger is almost a mirror image of the ale’s own flavour intensity. Sour Beer Pairing

WHAT

PAIR WELL? foods “Sour beers suit high-fat foods,” says Tonia Wilson-Vuksanovic, “though dishes don’t have to be super-bold in flavour—think salads, goat cheese, fish, foods with citrus notes.” Then again, sharp spices also find echoes in these beers. Mark Horsley suggests “a really good Indian curry” with his Citra Grove, “to marry the aromatics from the hops and spices, and then cut the heat with the Grove’s tangy acidity.” But his Number One match is oysters, balancing sour with salty.
