BEER  SWEET ON SOUR

BEERS gose Gose (pronounced go-sa, and not to be confused with Belgian geuze) originated in Goslar, Germany, in the 16th century. It’s a light, fruity malted-wheat beer made sour by lactic acid bacteria and traditionally flavoured with coriander seed and salt. Its popularity faded to the point of extinction in the 20th century but enthusiasts have since revived the style, and a number of craft breweries in Canada and the U.S. now produce it.

Collective Arts Prophets & Nomads Collective Arts Brewing produces this re- freshing gose ( LCBO 511030, 473 mL, $3.35), flavouring it with pink Himalayan salt and coriander seed. Yes, you can taste the salt, together with a well-integrated citrusy tang and a hint of something funky. These complex effects are precisely echoed by the coriander leaf, lemon zest and bay that Tonia uses to brighten the flavour of the rillettes.
