Grain Salads

Don’t do summer without them. A fridge stocked with delicious whole- grain salads means there’s always something good to eat alongside a quickly grilled chop or steak—or even on its own. These salads stand up well and often improve in flavour with time spent in the fridge.

Black Rice & Tomato Salad (recipe on page 150) Make the most of the season’s first tomatoes with a winning combo of flavours. Tossed with Worcestershire, garlic and Parmesan, this grain salad is the perfect steak side dish.

tip Maximize flavour by making sure your grains and legumes are fully dry before dressing them.

Bulgur, Lentil & Artichoke Salad (recipe on page 151) Earthy cumin and loads of fresh dill are what summer salad dreams are made of. These big flavours work beside virtually anything you can throw at them, but it’s likely you’ll eat this salad by the endless spoonfuls, all by itself.

Farro & Vegetable Salad (recipe on page 150) Eat this with your favourite grilled fish. Its robust Mediterranean flavours are a no-brainer with lemon-seasoned branzino, rich salmon or simple tuna brochettes.
