Compound Butter Having a compound butter in the fridge is a great way to layer flavour on simple summer food. It’s almost laughably easy to make—and the reward is food that tastes greater than the sum of its parts.

Lemon Grass Butter (recipe on page 154)

There’s no better partner for grilled fish or sea- food. Melt and brush on toasty buns for great fish burgers too. Use it to baste chicken or pork skew- ers while grilling, or toss it with charred broccoli.
