WATERMELON Savouring

Watermelon—usually a sweet natural dessert—goes savoury, adding flavour, freshness and texture to all manner of mains and sides. PERHAPS IT’S THAT unmistakable cool crunch—or it might be that subtle and refreshing sweetness… Whatever it is, we think there’s nothing quite as summery as watermelon. From the tiniest cucumber to the most colossal melons and every juicy variety in between, every member of the melon (or Cucurbitaceae ) family is excellent summer eating—sweet or savoury! Yes, savoury! Just as we enjoy cucumbers almost exclusively in savoury foods, watermelon works wonderfully in cold soups, salads and salsas as well as along- side fish and shellfish, meats, cheeses, tomatoes and other summer produce. And while we’d never pooh-pooh the singular summer pleasure of devouring an icy red wedge as is, these varied and delicious recipes demonstrate watermelon’s companionable versatility.
