COCKTAIL CLASSICS —
Trends come and go, but the Daiquiri is timeless. For over a century, this zesty little number that got its legs in the bars of Old Havana has been charming cocktail lovers around the world. The secret to this evergreen classic? Simplicity. Three ingredients, expertly shaken, chilled and served up with care. Daiquiri rules
THE CLASSIC Add 2 oz aged white rum, 3/4 oz lime juice, 1 tsp (5 mL) special fine granulated sugar and 6 ice cubes to a cocktail shaker and do a hard shake for 60 seconds. Strain through the shaker’s strainer and a fine mesh strainer (to catch the ice shards and pulp) into an icy- cold chilled coupe glass. RHUBARB TWIST Cut the sugar and, instead, use 1 oz of Giffard Rhubarb Liqueur ( LCBO 14405, 700 mL, $28.95). To add complexity, top off with 3 drops of Angostura bitters. + Makes 1 drink

THE CLASSIC Soak a sugar cube with 4 dashes Angostura bitters in a lowball glass. Add 1/2 oz soda and mud- dle until sugar is dissolved. Add 3 large ice cubes, 2 oz rye whisky and stir for 45 seconds. Squeeze an orange twist over the top to express oils, then drop it in for a garnish.
COFFEE TWIST After adding the whisky, stir in 2 oz cold-brew coffee (we used Station brand) for a perkier ver- sion of this classic.
Less is more when it comes to making the uber-popular, sturdy Old Fashioned, so skip the muddled cherries and lemons and keep it simple instead. Fashion-forward
