THE CLASSIC Add 5 ice cubes, 2 oz London Dry gin and 1/2 oz dry vermouth to a mixing glass. Stir well for 60 sec- onds. Strain into a chilled Martini glass. Garnish with an olive. Or 5.

LEMON TWIST Use Malfy Gin con Limone ( LCBO 484204, $40.50) instead of London Dry and 1 oz of Aperol ( LCBO 176834, $28.15) instead of vermouth. Garnish with a lemon twist.
Martini o’clock
Some like them dirty, others like them neat. Wet, dry, perfect, shaken, burnt or even filthy, the Martini seems to come in as many versions as there are people who like to drink them. The traditional, though, is a simple blend of gin and vermouth, stirred and served straight up—olive optional.
TROPICAL TWIST Swap in La Caravedo Puro Quebranta Pisco ( LCBO 542654, $41.95) in place of whisky, omit sugar, and add in 2 oz pineapple juice (in addi- tion to the lemon) for a tropical twist on a Sour. +
THE CLASSIC Add 2 oz whisky, 3/4 oz lemon juice, 1 tsp (5 mL) superfine sugar, an egg white and 6 ice cubes to a cocktail shaker and do a hard shake for 60 seconds. Strain into a small wine glass.
Sour power Probably the most versatile classic, the Whisky Sour easily fits in just about anywhere, from casual hangs to fancy celebrations. Plus, it’s delicious.
