CAPRESE SANDWICH WITH ROAST CHICKEN & PEACHES

Recipe on page 126

This juicy and tart IPA delivers bold hopping, a 6.9% ABV (alcohol by volume) and loads of raspberry flavour which together make for a mouthful of goodness. Wellington Brewery Shubie Sour Raspberry IPA LCBO 15414, 473 mL, $3.85 A popular choice amongst beer folk on account of its juicy and refreshing personality and the dry-hopping with flavourful hop varieties such as Citra, Amarillo and Cascade. Bellwoods Brewery Jelly King LCBO 14280, 500 mL, $6.50 This relative newcomer is a perfectly crafted balance of tart lactic acidity, juicy flavours of cherry, cranberry and tangerine, and punchy dry-hopping. Fixed Gear Brewing Co. Cherry Training Wheels Sour LCBO 13369, 473 mL, $4.25 Lightly textured and floral, this sour is the perfect food beer. With notes of rosehip and chamomile, it has a cleansing, bright finish. Side Launch Brewing Company Hibiscus Sour LCBO 144337, 473 mL, $3.70

These four pairings were chosen as a great match for the Caprese sandwich on account of their ability to link up with one of the sand- wich’s key ingredients—peaches. All the fruitiness found in these sours perfectly complements the ripe summer peaches and adds an additional pleasant fruity flavour to the mouthful.

THE UBIQUITOUS CAPRESE SALAD ORIGINATES FROM THE ITALIAN ISLAND OF CAPRI AND CONSISTS OF TOMATOES, BASIL AND FRESH CHEESE MADE FROM THE MILK OF THE WATER BUFFALO THAT GRAZE ON THE MAINLAND.
