Butter Tarts

With trails and festivals devoted to the quintessentially Cana- dian dessert, this version of the pioneer classic is based on a pro- prietary recipe from 1976. The rustic from-scratch treat is prized for having a thick, fluffy pastry that’s flooded with a runny, buttery filling that miraculously stays put. While the Ontario creation is also the subject of great debate—with or without raisins?—the harder decision might be which of the bakery’s five daily options (including multiple award-winning plain, pecan and novelty peanut-butter-and-jam varieties) to try. Loganberry Drink & Sugar Waffles

Although the Crystal Beach Amusement Park closed in 1989, it popularized the Loganberry drink and sugar waffle. A raspberry-blackberry hybrid, the former is a sweet and tart purple nectar, while the latter uses the same recipe and machine—including a daisy-shaped iron mould—from 1912, when the fried confection was introduced to the pub- lic. Look for PJ’s Crystal Beach Original Loganberry Syrup and Aunt Rosie’s Loganberry drink on restaurant menus and general store shelves in the area. Known internationally as Canadian bacon, peameal bacon is made from lean pork loin that, unlike traditional belly, is brined and rolled in cornmeal. The Hogtown original is most popular served as fried thick slices sandwiched in a kaiser or Portuguese bun. Paired simply with mustard, its most famous iteration is found at Carousel Bakery in Toronto’s St. Lawrence Market. While other Toronto stalwarts like Paddington’s Pump and Patrician Grill have their own takes on the classic, other embellishments include cheese and egg at The Merseyside or maple aioli, kale and tomato on a pain au lait at When the Pig Came Home.
