HIP TO SIP
Lowball to high Classic cocktails have their place in summer, but try them poured long and tall, with slightly different proportions and more mix—but all the flavour. Float your boat
Once a vintage curiosity, layered drinks with colourful “floats” on top have been rediscovered by modern Instagram cocktailians. The trick to successful float- ing is pouring a dry, light ingredient—a dry red wine or spirit, or unsweetened juice, as in our Long Cosmo—on top of liqueur, or a sweet or blended cocktail. Slowly dribbling the float over the rounded back of a spoon onto a finished cocktail allows for a gentle, indirect pour and creates a layered drink that evolves with every sip. If you have a narrow pouring spout on your bottle to control the flow, it’s even easier! —CR
