Ice is easy to forget. It’s usually flavourless and doesn’t like to hang out for long. But no proper summer drink would be complete without it. Besides the obvious chill quotient, ice (or more accurately, melted ice) can mellow strongly flavoured spirits and mixers, as it does in both of our shaved ice numbers. And because there’s no rule that ice can’t bring a little colour to the party, we invited a few sharply dressed suspects to mingle with your old favourites. There’s a new (sparkling!) sangria that’s poured over a suave granita, a giant ice sphere that gives kick to a Margarita, and a stir stick that doubles as a delicious ice pop in a tried-and-true G&T.
