Prettily pink, frivolous and undemanding—a legion of off-dry rosés shows up every season, eager for its Instagrammoment. Summer fashion accessories with sweet fruit-candy flavours, they’re fine as aperitifs but not so useful when it’s time to have something to eat, casting doubt on rosé’s cherished reputation for food-friendly versatility. Lest we forget, in lands all around the Mediterra- nean, dry rosés are taken much more seriously. They are the wines of summer, stepping in when the weather gets too hot to make big, tannic reds palatable. That’s when cooking tends to be done out- side and barbecues are the order of the day. From Spain to Greece to Tunisia, an uncomplicated but sturdy dry rosé, served well-chilled, is the wine of choice for grilled meat, vegetables and seafood— and that translates perfectly into the ideal match for any kind of great Canadian burger.
