Tangy Pasta Salad Here are three knockout examples of vinaigrette tossed versions you can whip together in a snap. Find our White-Wine Vinaigrette recipe and explore more stir-in ideas on page 182. 1. SUPER SEASONAL Toss rinsed and drained cooked pasta with sliced zucchini that’s been sautéed until it’s meltingly tender. Add texture and tang with quick-pickled beans, carrots and/or onion (see Quick Pickling on p. 182). Stir in briny ingredients like pepperoncini and marinated artichokes. Stir warm cooked orzo with a tangy vinaigrette, cucumbers, red onion, tomatoes and/or sundried tomatoes, fresh or roasted peppers, olives and marinated artichokes. Stir in parsley, dill and chives. Top with lemon-and-oregano marinated cooked chicken, sliced or shredded. 3. PANZANELLA-STYLE PASTA SALAD Marinate tomato, cucumber and pepper chunks in vinaigrette for 1 hour. Toss with sizzled olives and capers and basil leaves. Allow flavours to infuse for a while at room temperature before tossing with cold-rinsed 2. MEDITERRANEAN INSPIRED
