Grape Mix When it comes to cocktails, vino gets short shrift. It’s too bad, because wine can star in a whole range of easy, refreshing lower-alcohol drinks that are particularly appealing in summer. Here’s how to get mixing with wine.

KIR If you have a bottle of L’abbé François Cassis (LCBO 57281, $26.90), it opens up a world of wine- based aperitifs. Mix up approximately one part cassis to every eight parts chilled wine; make a Kir with a crisp white, a Kir Royale with dry sparkling, or a lesser-known Communard with a light, fruity red.

SPRITZER The original wine cocktail, a Spritzer is two parts wine to one part soda served in a big wine glass over ice. You can use red, white or rosé; just make sure it’s fruity with no discernable oak. A little simple syrup tempers acidic wines, and you can garnish to your heart’s content with citrus wheels, seasonal fruit and/or herbs.
