WHICH GLASS? It depends on whether you serve your Daiquiri straight up (use a coupe) or with the ice from the shaker Daiquiris are big drinks, especially if a banana is involved, and a Hurricane glass is usually needed. (try a Collins glass). Frozen

Variations on a Theme THE DERBY DAIQUIRI

THE CAIPIRINHA Purists may argue that this Brazilian cousin is too distant a relative. Wash 1 small lime and cut off ends. Cut lime vertically into thin segments. Crush segments against the bottom of an Old Fashioned glass with a muddler. Add 1 1/2 tsp cane sugar and muddle to dissolve. Add 1 1/2 oz Leblon Cachaca (LCBO 516088, $34.95) , four ice cubes and stir. Garnish with lime segment. Makes 1 drink

CHARLES H. BAKER’S REVISED RECIPE FOR THE DAIQUIRI The addition of orange flower water lends a charming fragrance to the cocktail as you lift the glass to your lips. 2 oz white rum, juice of 1 lime, 1 tsp sugar, shaken hard with crushed ice. Tip everything into a tall flute. Finish by sprinkling on 3 or 4 drops of orange flower water. Makes 1 drink

THE BACARDI

COCKTAIL The grenadine replaces the sugar as this cocktail’s sweetener and also turns the drink red. 1 3/4 oz Bacardi Superior white rum, 1 oz fresh lime juice, 1 tsp grenadine, shaken hard with crushed ice and strained

Less tart than the classic and with a pleasing orange note.
