Butter-Braised Zucchini with Garlic & Mint

Stewing zucchini until melt ingly soft brings out its natural sweetness while allowing it to absorb a generous amount of garlicky butter. Once you try this dish, it will be hard to go back to al dente zucchini. 3 lbs (1.36 kg) zucchini (green and yellow), trimmed 6 tbsp (90 mL) unsalted butter
