In a medium mixing bowl, whisk yolk, mustard, mayonnaise, anchovy and garlic until combined. Whisk in lemon juice. Add oil in a slow, steady stream, whisking constantly, until thick and emulsified. Whisk in cheese, salt and pepper. Transfer to an airtight container. Refrigerate for up to 1 day. 3. When ready to serve, transfer bacon and kale to a large mixing bowl.
