In a medium mixing bowl, whisk yolk, mustard, mayonnaise, anchovy and garlic until combined. Whisk in lemon juice. Add oil in a slow, steady stream, whisking constantly, until thick and emulsified. Whisk in cheese, salt and pepper. Transfer to an airtight container. Refrigerate for up to 1 day. 3. When ready to serve, transfer bacon and kale to a large mixing bowl. Add enough dress ing to coat generously. Toss. Split potatoes lengthwise and top with Caesar salad. Sprinkle crispy crumbs and more Parmesan overtop. Serve immediately. Serves 4

Topping a baked potato with salad may sound like a risky move, but the sturdy kale holds its own on a hot potato and the garlicky dressing, smoky bacon and nutty Parm are all natural toppings. Bonus: All the salad elements can be prepped a day in advance.
