Like flank steak’s cheaper cousin, skirt steak is prized for flavour, not tender ness. Here, a light pounding and quick marinade soften it up before it’s grilled on skewers. A spicy salsa verde has herbal notes that complement fruity, wine-based cocktails or full-bodied rosés.

Blackberry & Mint Rosé Cooler p. 129 Blackberries and mint are muddled then topped with crème de cassis and sparkling rosé. The icy cooler has just enough sweetness to tame the heat of the spicy sauce, while the lemony acidity tempers the rich beef. It’s a perfect start to any backyard barbecue.
Remy Pannier Rosé d’Anjou AOC LCBO 12641, $16.75 This Loire rosé is based mainly on the native Grolleau Noir grape with a healthy dose of Gamay. The nose starts off with wild strawberry then, with some air, it reveals violets and spice. It’s medium-bodied and has red fruit flavours that are a wonderful foil to the savoury beef and herby sauce.
Malivoire Ladybug Rosé VINTAGES ESSENTIALS 559088, $17.95
A Cabernet Franc–heavy rosé from Niagara offering aromas of watermelon, fresh straw- berry and tart apple. Mild notes of red pep per and dried herbs resonate with similar flavours in the dish, making a well-suited pairing for the smoky beef and peppery sauce. It’s a great duo for a casual patio snack or the start of a bigger meal.
