Cowbell Brewing Co. Peach Cider brims with fresh peach flavour that rings loud even when icy-cold.
Peachy Cider Granita
Turns out that hard cider makes a near-effortless and seriously tasty shaved ice–style treat. The alcohol content and sugars prevent it from freezing solid and help make easy work of turning it into a frozen dessert-meets-cocktail. Pour 2 cans (473 mL each) Cowbell Brewing Co. Peach Cider ( LCBO 32750, 473 mL, $3.65 ) into an 8 x 8-inch (20 x 20-cm) baking dish, preferably glass. Freeze overnight. Using a fork, scrape into fine shards and return to freezer until ready to use. Divide between four glasses and top each with 1 oz Sweet & Salty Coconut Syrup (recipe follows). Garnish with a peach slice or two. SWEET & SALTY COCONUT SYRUP Combine 1 can (400 mL) of full-fat coconut milk with 1/2 cup (125 mL) sugar and 1/2 tsp (2 mL) fine kosher salt in a small pot. Stir to dissolve sugar. Bring to a boil and remove from heat. Chill before using. (Syrup will keep 1 week stored in the fridge. Shake before using.) Makes 4 drinks
