With upfront juicy tropical fruit notes, Rings of Saturn Hazy IPA is the perfect swap for soda in a citrusy Mojito.

Hazy IPA Mojito Hazy IPAs are often described as “juicy.” Lean into that by topping up a Mojito with this very now style of beer instead of the usual soda water. It’s a surefire summer champ. Cut a juicy lime into 8 wedges. Add 6 wedges to a cocktail shaker along with 10 mint leaves. Muddle then top with ice. Pour 1 oz white rum and 1 oz Demerara Syrup (recipe follows) overtop. Shake vigorously for 20 seconds, then strain into a mug filled with crushed ice. Top with High Park Brewery’s Rings of Saturn Hazy IPA ( LCBO 25046, 473 mL, $3.50 ) and garnish with remaining lime wedges and a mint sprig.

Makes 1 drink

DEMERARA SYRUP Combine 1/2 cup (125 mL) demerara sugar and 1/2 cup (125 mL) water in a small pot. Bring to a boil, cool to room temperature, then refrigerate until chilled.
