Leftovers reborn: Freeze leftover batched drinks in ice-cube trays, then reconstitute them with soda water or blend them to make a slushie next time the mood strikes. High and low: Rent highball and lowball glasses (avoid stemmed cocktail glasses, which break more easily) to avoid the waste or recycling burden from dispos ables. Or consider purchasing reusable serving vessels, from jam jars to chic plastic tumblers. Root to stem: Get the most out of peels, stems and unused bits of fruit and botanicals by making cocktail cordials, syrups or fla vourings, like citrus peel–based oleosaccharum (find a recipe at LCBO.com/fdsummer24). Special of the day: Chalkboard or letterboard menus save on paper (as do digital invitations) and allow you to make last minute substitutions or changes easily, too.
